Just outside Rovinj, on the fertile and renowned soil of Istria, lies the olive grove of Hotel Spirito Santo. Home to around 40 carefully nurtured trees, our grove produces olives of exceptional quality. Each olive is handpicked with precision to preserve its integrity, ensuring the finest result.
Our extra virgin olive oil is crafted using a cold-pressing method, extracting pure oil directly from the fruit without any chemical or biochemical interference. This traditional, mechanical process guarantees a completely natural product, rich in flavor and exceptional in quality.
